Gluten free, vegan


4 tbsp chia seeds

2 tbsp coconut yoghurt

250ml almond milk / cashew milk / coconut milk

couple of drops of vanilla essence

Half an apple, grated

Walnuts or flaked almonds

Pumpkin, sunflower or sesame seeds or a combo (you can toast these or the flaked almonds if you like)


Maple syrup (optional)


  1. Put all ingredients except toppings like berries, nuts and (pumpkin, sunflower, sesame) seeds into a jar and stir.
  2. Put lid on and leave in fridge overnight (the chia seeds absorb the liquid and swell creating a pudding consistency).
  3. Add berries and nuts and extra seeds (and maple syrup if using) to serve.
