Buckwheat doesn’t have wheat or gluten in it and although it’s often used as a flour, it’s not a grass, but a seed.  It contains high quality protein and fibre and will not spike your blood sugar.  So it’s a great option for pancakes.  I mix half gluten free flour (I use Doves Farm) and half buckwheat when making these for my kids as it has a fairly strong flavour but I intend to gradually reduce the gf plain flour!

Ingredients
100g buckwheat flour
300ml oat or nut milk
2 eggs
1/2 tsp vanilla

Directions
Whizz in a blender
Pour mix into hot pan (I use coconut oil to fry them)
Cook
Toss
Eat
