Buckwheat doesn’t have wheat or gluten in it and although it’s often used as a flour, it’s not a grass, but a seed. It contains high quality protein and fibre and is less likely spike your blood sugar. So it’s a great option for pancakes.
Ingredients
100g buckwheat flour
300ml milk of your choice
2 eggs
1/2 tsp vanilla
Directions
Whizz in a blender
Pour mix into hot pan (I use coconut oil to fry them)
Cook
Flip
Eat
