Here are 3 of my favourite super fast and easy lunches that I have between work calls at home. They all have high levels of nutrients that are key to good thyroid health but my favourite thing about them is that they only take 10-15 minutes to put together.
Prawn and cabbage stir fry
Ingredients
1 tbsp Coconut Oil (divided)
200g raw king prawns / shrimp
1 Garlic (cloves, minced)
½ Lemon (juiced)
Chilli Flakes
Couple of handfuls of Green Cabbage (finely sliced)
Sea Salt & Black Pepper (to taste)
1 tbsp Sesame Seeds
Directions
- Heat half the coconut oil in a large pan over medium heat.
- Add the prawns, minced garlic, lemon juice and chilli flakes. Saute until prawns are pink and cooked through (about 2 to 3 minutes).
- Transfer the prawns and juices into a bowl and cover to keep warm. Set aside.
- Place the pan back over medium heat and add the remaining coconut oil.
- Add the green cabbage and season with sea salt and black pepper to taste.
- Saute for about 8 to 10 minutes, stirring occasionally.
- Add the prawns and marinade back into the pan and mix well.
- Divide onto plates and garnish with sesame seeds.

Very tasty broccoli pasta
Ingredients
Tenderstem broccoli
Tin of anchovies in olive oil
Garlic – chopped (as much as you like – I use a clove or 2)
Chilli flakes
Pasta (I used combination of brown rice pasta and red lentil beetroot pasta)
Directions
- Put the pasta on to cook
- Heat the oil from the anchovies in a pan then add in the garlic and anchovies
- Add the broccoli to the pan
- Once the anchovies have dissolved and the garlic is cooked, add a couple of tablespoons of water and put a lid on the pan so the broccoli cooks
- Add some chilli flakes to your taste
- Stir in the cooked pasta
- Add parmesan if desired

Lentil Salad with Avocado & Rocket
Ingredients
– ½ cup cooked lentils
– 1 handful rocket
– ½ avocado, diced
– Sunflower seeds, pumpkin seeds, walnuts or flaked almonds
– Leftover roast vegetables if available, otherwise add cucumber, tomatoes or other salad vegetables
– Olive oil, lemon, sea salt, black pepper
Directions
Mix all ingredients and serve chilled.
